The kalita wave is a flat-bottom dripper that tends to produce an even extraction, and is a favorite of many serious professional and home brewers alike.


The following is a list of brewing methods I have collected from various sources. Many of these come from burmese_daze's wonderfully curated list on reddit!



Crema

Prerequisites:

  • Grind: 17/40 (Baratza encore)
  • 27g coffee, 400g water (1:15 ratio)

Steps:

  • Rinse filter by pouring water into center
  • Bloom 30g water for 30 seconds
  • At 30 seconds in, continuously pour 400g water until 2:45
  • Stir

This is a winning method used by the 2013 United States Brewers Cup Champion.

Prerequisites:

  • Grind: 14/40 (fine)
  • 24g coffee, 380g water (1:15 ratio)
  • Temp: 205 F

Steps:

  • Rinse filter by pouring water into center
  • Bloom 50g water for 45 seconds
  • Continuously pour 190g water with a high flow kettle
  • Pour up to 380g with flow restricted kettle
  • Done at ~ 3:30



George Howell Coffee

Prerequisites:

  • Grind: 14/40 (fine)
  • 25g coffee, 390g water (1:15 ratio)
  • Temp: 201-205 F

Steps:

  • Rinse filter by pouring water into center
  • Pulse pour 65g water for in 15 seconds
  • Repeat pulse pours every 15 seconds x 5
  • Done at ~ 3:30



The Perfect Daily Grind

Prerequisites:

  • Grind: medium course
  • 20g coffee, 360g water (1:18 ratio)

Steps:

  • Bloom 40g for 30 seconds
  • At 30 seconds in, pour 150g
  • At 60 seconds, pour 50g
  • At 1:30 pour 50g
  • At 2:00 pour 70g


The Dogwood

Prerequisites:

  • Grind: Large coarse (kosher salt)
  • 20g coffee, 300g water (1:15 ratio)

Steps:

  • Bloom 45g for 30 seconds
  • 30 seconds: pour 130g
  • 60 seconds: pour 55g
  • 90 seconds: pour 55g
  • 120 seconds: pour 10g
  • 150 seconds: pour 50g


Drop Coffee

Prerequisites:

  • Grind size: Medium
  • 16g coffee, 260g water (1:16.25)

Steps:

  • Bloom 45 g for 30 seconds
  • At 30 seconds: pour 100g
  • 60 seconds: pour 50g
  • 90 seconds: pour 50g
  • 120 seconds: pour 60g


Stumptown

Prerequisites:

  • Grind size: Small (table salt)
  • 21g coffee, 375g water (1:17.8)

Steps:

  • Bloom 60g for 45 seconds
  • 45 seconds: pour 140g
  • 1:15 minutes: pour 50g
  • 1:30 minutes: pour 50g
  • 1:45 minutes: pour 50g
  • 1:55 minutes: pour 25g


Craft Coffee

Prerequisites:

  • Grind size: Medium
  • 21g coffee, 300g water (1:14.3)

Steps:

  • Bloom 40g for 45 seconds
  • 45 seconds: pour 110g
  • 1:15 minutes: pour 40g
  • 1:30 minutes: pour 40g
  • 1:45 minutes: pour 40g
  • 1:55 minutes: pour 30g


Five Senses

Prerequisites:

  • Grind size: Medium
  • 15g coffee, 280g water (1:18.6)

Steps:

  • Bloom 50g for 30 seconds
  • 30 seconds: pour 130g
  • 1:00 minutes: pour 100g


White Horse

Prerequisites:

  • Grind size: Medium
  • 18g coffee, 300g water (1:16.6)

Steps:

  • Bloom 36g for 45 seconds
  • At 45 seconds: continually pour 300g of water for 2 minutes


Perfect Daily Grind

Prerequisites:

  • Grind size: Medium
  • 20g coffee, 360g water (1:18)

Steps:

  • Bloom 40g for 30 seconds
  • 30 seconds: pour 150g
  • 1:00 minutes: pour 50g
  • 1:30 minutes: pour 50g
  • 2:00 minutes: pour 70g



Tobys Estate

Prerequisites:

  • Grind size: Medium
  • 16g coffee, 250g water (1:15.6)

Steps:

  • Bloom 30g for 30 seconds
  • 30 seconds: pour 70g
  • 1:00 minutes: pour 70g
  • 1:30 minutes: pour 80g



Kaldi's

Prerequisites:

  • Grind size: Medium
  • 24g coffee, 400g water (1:16.6)

Steps:

  • Bloom 48g for 30 seconds
  • 30 seconds: continuously pour up to 400g until 2:00 minutes



Brick & Mortar

Prerequisites:

  • Grind size: Medium
  • 24g coffee, 360g water (1:15)

Steps:

  • Bloom 50g for 30 seconds
  • 30 seconds: pour 100g
  • 1:00: pour 100g
  • 1:30: pour 110g



Klatch

Prerequisites:

  • Grind size: Medium
  • 27g coffee, 350g water (1:13)

Steps:

  • Bloom 40g for 45 seconds
  • 45 seconds: pour 110g
  • 1:15: pour 100g
  • 2:00: pour 100g


Compelling Coffee

Prerequisites:

  • Grind size: Medium
  • 20g coffee, 320g water (1:16)

Steps:

  • Bloom 40g for 40 seconds
  • 40 seconds: pour 160g
  • 1:20: pour 30g
  • 1:40: pour 30g
  • 2:00: pour 30g
  • 2:30: pour 30g
